Recipe: Hearty Happy Camping Smothered Chicken

Yum yummy. Antioxidant onions, heart healthy bell peppers, and seasoned chicken breast over a charcoal bed just might make you faint
I'll spare you a dull pontification about what makes grilled chicken with bell peppers and onions awesome.  Grab a beer and read this:

Ingredients

  • Two chicken breast halves
  • Two rings of green bell pepper, quartered
  • One slice of white onion, quartered
  • Garlic salt
  • Mrs. Dash seasoning
  • Shredded mozzarella cheese

Directions

This one is almost too easy.

  1. Sprinkle the chicken breasts with garlic salt and Mrs. Dash
  2. Wrap chicken in foil, place on heated grill over coals
  3. Cook for about 6 minutes, flip the breasts
  4. Cook for another 2 minutes, then inspect; chicken shouldn't quite be done yet
  5. Add vegetables, re-wrap and place on grill
  6. Cook for another 2 minutes, then inspect
  7. Add shredded cheese, cover, and place on grill
  8. Let the cheese melt
  9. Inspect.  If it's looking good, eat it up.

Add the mozzarella cheese after it's all cooked because the cheese only needs about 20 seconds to melt
Shortcuts & Alternatives

  • Choose your own vegetables; cucumber?  Go for it.  Potatos?  Carrots?  Tomatoes? Sure! Radishes?  If you're awesome.
  • Gutsy?  Forfeit veggies, garlic salt and spice for teriyaki sauce and pineapple slices
  • Good sides are mashed potatoes or rice. Or chips and salsa and beer if you're with us.
