Recipe: Favorite Camping Turkey Chili

Let that cheese melt and dig in
Not a fan of ground beef?

Check out this chili - it spices up ordinary ground turkey into a dish that will please your taste buds. And with the lower fat and cholesterol, your heart and waistline will appreciate it, too! I love that this recipe is a one-pan meal, with not much prep time or clean-up required.

Ingredients

  • cooking oil
  • 1-2 lbs ground turkey
  • 1 med green bell pepper, diced
  • 1 med white onion, chopped
  • 1 jalapeno, diced and seeded
  • 1 clove garlic
  • 1 small can tomato paste
  • 1 can kidney beans (optional)
  • 3 tbsp chili powder
  • 1 tbsp ground cumin
  • all-spice, cinnamon, salt, pepper, and honey to taste
  • bottle of IPA beer (optional)- substitute a can of tomato sauce or chicken broth if desired

Preparation

It might not look like much, but you know....
Brown the turkey in 1 tbsp of oil over medium heat. Add the vegetables and let them get tender. Next, stir in the tomato paste and let it warm through. Add spices to taste. Finally, add the beer (alcohol will cook out, making the flavor more intense) and honey. Serve it topped with cheese and green onions, if desired.

Short cuts

  • Dice and chop the veggies at home; bring in a sealable baggie or locking plastic tub
  • Brown the turkey ahead of time (or make it all up ahead of time) and warm it through in a pan at camp, while you relax with a book or play with the kids
  • Be creative with the flavors- if you don't like (or left at home) a particular spice, substitute something else to suit your taste
